How high is the beam spread once set on the jump or does it need to be adjusted in height to suit each jump height?

The bean can be considered a line, you would have to move depending on size.

Would also have to consider mounting on a tripod of similar in case the course finished with a tunnel for example.

It's possible, but I would recommend using jump wings. I haven't seen any course ending or starting in tunnels, not even hoopers or tunnel cups. But It can definitely be done.

How many times does it record or save in the app

Several hundreds, as much as the internal memory of the device allows.

Can the app be set up for a double pass so for instance once the starter timer has been activated the course may pass through the “finish obstacle” as part of the course before the actual finish?

Yes. there is a setting to force start / stop roles (so the timer does not stop when jumping on start a second time). There is also a setting for the number of passes at the stop gate.
